This time last week I was not long home from BritMums Live and rummaging through all the bags of swag that I'd accumulated! Amongst the goodies was a set of lolly moulds from the extremely lovely people at Crocs... just what I'd been meaning to get, and as soon as I saw them I already had a recipe idea that I wanted to try out.
The weather has been suffocatingly hot this week, so what better time to test it out... and the recipe is fab to get the kids involved too, as it uses measuring cups instead of scales.
These lollies are deliciously refreshing... and I added a couple of extra ingredients to give it just a little 'zing'!
Coconut + Pineapple Ice Pops
Prep time: 5 mins
Freezing time: 3 hrs
Makes: 6 ice pops
3 Weightwatchers ProPoints per ice pop
Ingredients
3 slices of canned pineapple (in juice, drained)
1 cup pineapple juice
1 cup coconut milk (canned)
1 cup skimmed milk
1/4 tsp hot chilli powder
1/4 tsp ground ginger
1 tbsp demerara sugar
Directions
Place all ingredients in a blender and blend until smooth.
Divide mixture between the 6 lolly moulds and place in the freezer for at least 3 hours.
Enjoy!

This this sounds lovely. Funnily enough I bought some moulds myself a few days ago. And I've got pineapple... hmmm Thanks for sharing.
