I've mentioned my banana bread quite a few times on this blog now, and it is definitely a regular feature at home, so I thought I'd share the super simple recipe. It's so easy to remember, you just have to think - 2, 2, 4, 6, 8!
Ingredients
2 eggs
2 ripe bananas, mashed
4oz butter
6oz caster sugar
8oz self raising flour
(optional: a few handfuls of sultanas and/or chopped walnuts)
Method
- Preheat your oven to 180 degrees
- Mash bananas and set aside
- Cream together butter and sugar
- Beat the eggs into butter and sugar mixture
- Mix in the flour - I don't sift it, but you could if you wanted to
- Mix in the bananas and any optional ingredients
- Pour into a greased and floured 2lb loaf tin. Or I've found that loaf liners not only make the finished product look much prettier, but it saves on greasing the tin and also helps to keep the loaf fresher.
- Baked in your preheated oven for 40 minutes
- Then turn the temperature down to 150 degrees and continue to bake for a further 30 minutes
- Turn out onto a wire rack and allow to cool before devouring!
We particularly enjoy it with a light spreading of butter :)

That is such a neat recipe to have a little memory trick to it. Apparently the trick works because that bread looks delicious. I have a sweet treat linky on my blog every week called "Sweets for a Saturday" and I'd like to invite you to stop by this weekend and link your yummy bread up.
ReplyDeleteI loves banana bread too, a regular in our house too, although my recipe seems to involve a large amount of golden syrup and no raisins. Oh, and a large THICK covering of butter. Hmm, there's room for improvement in mine isn't there so I don't harden my children's arteries prematurely.
ReplyDeletelovely recipe, just slightly different from mine. will have to try, great photo and I really like the liners. Clever idea the 2,2,4 thing.
ReplyDeleteWe always have left over bananas so I make banana bread a lot and then try very hard not to eat it all. ;) Love the photo.
ReplyDeletenom! looks delicious :)
ReplyDeleteOh. And more Banana Bread. Mmmmmmh. I love Banana Bread!
ReplyDeleteThat's a clever way of remembering the recipe. I'm looking forward to making some banana bread again soon.
ReplyDeleteI love the effect you have on your pics.
Sounds yummy, will have to give this recipe a try too.
ReplyDeleteOoooh another banana cake. I have to say I don't like bananas but I think I'd love the cake (I think I like any cake!). I may have to give it a try :)
ReplyDeleteNice trick for remembering the recipe! What with yours and Gemma's recipes I'm fairly certain I know what I'll be baking tomorrow :-)
ReplyDeleteLove it, looks so easy and we love bananas. Love your octopuses :) I am having my first give away, stop over to enter.
