I've been having a few uninspired days... nothing is exciting me at the moment. I'm feeling so unmotivated it was difficult to even summon the motivation to cook for the babies at lunchtime. But when I did eventually get into it I turned into a bit of a Baby Master Chef! I opened the fridge to find 3 boiled potatoes (left over from last night's dinner) and a handful of cherry tomatoes. What the hell was I going to do with that?! And then I remembered that the lovely people from Plum Baby had sent me a selection of sauces to try. They really are a nice bunch of people after having the pleasure of meeting them at CyberMummy 2010.
So, what did I come up with?
Crushed New Potatoes with Tomato, Spinach and Basil
Serves 2 (babies) generously
3 Boiled Potatoes
2 Cherry Tomatoes
1 Small Lump of Cheese
1 Knob of Butter
1 Pouch of Plum Baby Spinach & Basil Pesto Sauce
- In a bowl gently crush the potatoes and stir in the tomatoes that have been chopped to a suitable size for your baby.
- Add a knob of butter and crumble over the cheese.
- Microwave on high for 1 minute.
- Tear off the top of the sauce pouch and microwave until heated through (about 30 seconds).
- Combine the sauce with the potato mix and allow to cool slightly before serving.
I was a little worried that the sauce might have been a bit too basil-y for Tilly and Jasper. We'd tried them a little while ago with a different pesto sauce and they turned their noses up at it. This time they were eagerly reaching out for more, so I guess it was a hit!
So... what can you do with 3 boiled potatoes and 2 cherry tomatoes?
